Das legendäre Hotel Palace Luzern wurde erstmals im Jahr 1906 eröffnet und befindet sich in Luzern am Ufer des Vierwaldstättersees. Nach einer kompletten Renovierung eröffnete das Mandarin Oriental Palace, Luzern im September 2022 seine Türen für Kollegen und Gäste. Das Hotel verfügt über 136 Zimmer und Suiten mit herrlichem Blick auf den Vierwaldstättersee und die Berge. Drei Restaurants, eine Bar mit wunderschöner Terrasse, der Meeting- und Eventbereich, der Spa sowie ein Fitnessraum runden das vielfältige Angebot für unsere Gäste ab.
Als Pastry Sous Chef werden Sie für folgende
Aufgaben verantwortlich sein:
Direkte Vertretung und Unterstützung des Chefs Clement Laurent, ihres eigenen Outlets
Planung, Führung und Motivation des Konditorteams
Organisation und Sicherstellung eines reibungslosen Ablaufs in der Küche unter Einhaltung der Qualitätsstandards
Gewährleistung einer einwandfreien Zubereitung, Qualität und ansprechenden Präsentation unserer Speisen entsprechend unserer hohen Qualitätsansprüche
Kontrolle der Warenbestellung und -lagerung sowie korrekter Umgang mit dem Wareneinsatz
Verantwortlich für die tägliche Kontrolle der Hygienevorschriften und der Sauberkeit im Rahmen der HACCP-Richtlinien
Stetige, kreative und konzeptionelle Weiterentwicklung neuer Foodkonzepte in Zusammenarbeit mit unserem Executive Pastry Chef
Enge Zusammenarbeit mit allen Abteilungen für ein einzigartiges Hotelerlebnis
Teilnahme an Meetings wie z.B. das Function-Sheet-Meeting
Als Pastry Sous Chef
erwarten wir von Ihnen:
Eine abgeschlossene Kochausbildung. 3 Jahre Berufserfahrung in einer vergleichbaren Position in der gehobenen Hotellerie/Gastronomie
Flexibilität und Belastbarkeit – zu Ihrer Position gehören Wochenend- und Feiertagsschichten
Mitreissende Kommunikations- und Ausdrucksfähigkeit
Führungsstark, aufgeschlossen und Organisationstalent
Kreativität - um Ihre kulinarische Handschrift mit einzubringen
Hohes Qualitätsbewusstsein, kochbegeistert, und zuverlässig
Aufgeschlossenheit und Teamfähigkeit

We are looking for a Pastry Sous Chef to join our iconic Mandarin Oriental Palace , Lucerne!
The legendary Hotel Palace Luzern first opened in 1906 and is in the city on the shores of Lake Lucerne. After a complete renovation, the Mandarin Oriental Palace, Luzern reopened its doors in September 2022. It comprises 136 rooms and suites offering excellent views over the lake and mountains. Three restaurants, one bar together with a variety of meeting facilities, a Spa and a fitness room roundup our offer for our Guests.
As Pastry Sous Chef you are responsible for the following
duties:
Representing and supporting the Chef Clement Laurent of your own outlet
Planning, leading and motivating the pastry team
Organising and ensuring the smooth running of the kitchen
Ensuring flawless preparation, quality and appealing presentation of our food in line with our high-quality standards
Controlling the ordering and storage of the merchandise as well as handling its use
Responsible for the daily control of hygiene regulations and cleanliness within the framework of the HACCP guidelines
Continuous, creative and conceptual development of new food concepts in collaboration with the Executive Pastry Chef
Close cooperation with all departments for a unique hotel experience
Participating in meetings such as the function sheet meeting
As Pastry Sous Chef we are
looking for :
A completed vocational training as Pastry Chef. 3 years of professional experience in a comparable position in the upscale hotel / catering industry
Flexibility and ability to work under pressure - your position includes weekend and holiday shifts
Great communication and expression skills
Strong leadership skills, openminded and organizational skills
Creativity - to contribute your culinary signature
High quality consciousness, enthusiastic about cooking and reliable
Open-mindedness and teamwork
Excellent manners and a well-groomed appearance, as well as a positive charisma
Very good knowledge of German and English. Further foreign language skills are an advantage
